INGREDIENTS
Spinach
1 to 2 tbsp olive oil
1 garlic clove, finely chopped
500g baby spinach
Pinch nutmeg, optional
Salt and freshly ground black pepper
Tzatziki
120g finely grated cucumber
Large pinch salt
240g thick Greek yoghurt
1 tbsp lemon juice
½ tbsp extra virgin olive oil
1 garlic clove, grated
Pinch salt
1 tbsp chopped fresh dill
1 tbsp chopped fresh mint, optional
DIRECTIONS
Spinach
Wilt spinach in a large saucepan over high heat.
Cool slightly and squeeze out excess liquid.
Heat olive oil in a frying pan, add garlic briefly, then add spinach.
Season and heat through.
Tzatziki
Sprinkle salt over cucumber and leave for 5 minutes.
Squeeze out excess moisture.
Mix all ingredients and chill until needed.
